Chicory and pear salad

This salad tastes so good that I’m going to make it again tomorrow!

Ingredients for 4 people: 18 walnut halves, 6 pieces of chicory, 2 pears. For the dressing: 1 mango, 1 tbsp liquid honey, 1/2 lemon, 1 pinch of salt, 4 tbsp walnut or argan oil

Roast the walnuts in a pan without oil.

Clean and wash the chicory, halve lengthwise and cut into 0.5 cm thick strips. Peel, core and dice the pears.

For the dressing: Puree the mango flesh with the lemon juice, honey, salt and oil in a blender to make a thick dressing. Mix the chicory with the walnuts and pear pieces and serve with the dressing.
