Thumbprints – The cookies without everything
Roast 1 cup of rolled oats and 1 cup of almonds in a pan without oil. Grind the almonds and rolled oats in a food processor and mix with 1 cup of spelt flour.
Then add ½ cup of maple syrup, 1/3 cup of oil and ½ teaspoon of cinnamon and continue to blend in the food processor.
Form small balls from the dough, make a depression with your finger and fill with jam or jelly.
Bake in a preheated oven at 180 degrees for 10 to 12 minutes.
