My birthday cake
This year I made a very special kind of cake. The weather was very warm, so we could do with something cool and refreshing.
Peel the mangoes and remove the flesh from the stone.
Then freeze the fruit. If frozen, puree through a “Champion Juicer” or in a food processor.
Heat the butter and honey in a pan until it caramelizes. Add the nuts, stir them into the caramel and leave to cool slightly.
Spread the cold mango mixture in a cake tin, then top with the nut caramel and enjoy!!! Super tasty.
