Gazpacho andaluz) is a Spanish cold soup made from uncooked vegetables. She comes from Andalusia. The original soup dates back to the Moors and was a white garlic soup made from cucumber, bread, garlic, olive oil, vinegar, salt and water. The ingredients were crushed in a mortar. Tomatoes and peppers were first brought to Europe from America by Christopher Columbus and were not included in this soup until the 18th century.

Ingredients: 3 large tomatoes, 1 red bell pepper, 4 corn wafers, 1 vegetable onion, some garlic, 1 tsp salt, 5 tbsp lemon juice, 5 tbsp olive oil, 1 cucumber, 1 avocado.
