Vegan pancakes

Mix these wet ingredients together: *2 small zucchini, grated OR 1 ripe banana, mashed, *2 tablespoons oil, *1 tablespoon maple syrup, *1 cup milk (rice, soy, oat, almond, or similar depending on your tolerance).

In separate bowl, mix together these dry ingredients: *2 teaspoons cream of tartar baking powder, *1/4 teaspoon salt, *1.5 cups gluten-free flour, *1/4 cup ground steamed poppy seeds

Mix the wet and dry ingredients together. The result is a firm but pourable dough.

Bake in the pan over a medium heat, keep warm in the oven at 100 degrees.
