Lentil pancakes with vegetable stir-fry
For the lentil dough, take 1 pound of red lentils and grind them in a grain mill. Mix with spices (red pepper berries, cardamom, salt) and water to form a liquid batter.
Clean and chop the vegetables. First fry the onions, stirring constantly.
When the onions are translucent, add the diced celeriac. Keep stirring.
After 5 minutes, add the leek and carrots. Keep stirring until the vegetables are browned on all sides and cooked through. Takes about 20 minutes in total.
Heat the oil in another pan and pour in a ladleful of the lentil batter. Fry the pancake on both sides until crispy and no longer reddish. Then the pancake is done and can be enjoyed!
