White beans as a spread / dip
As a protein-rich side dish to the potatoes, we made a spread from white beans today:
Fry 4-5 garlic cloves in oil until golden and fragrant.
Place 1 jar of white beans in a blender.
Add 2 tablespoons of tahini (sesame butter), the juice of one lemon, 1/2 teaspoon of rock salt and, of course, the fried garlic with the oil and puree until creamy.
Then we ate a salad of chicory and peppers with just olive oil and salt.
This is actually the recipe for hummus, i.e. chickpea spread. However, we were out of chickpeas, so I tried it with white beans and it tastes delicious!
