Pak Choi
Pak choi, also known as mustard cabbage or leaf cabbage, is a close relative of Chinese cabbage. It forms loose heads with light-colored leaf veins. The leaves are a darker green, similar to those of chard. Baby pak choi has smaller heads. Shanghai pak choi has green leaf veins.
Cut the pak choi into pieces and sauté in plenty of garlic, ginger, chili peppers and oil. Season with tamari and maple syrup. Cook for approx. 7-10 mins. Pak choi must be seasoned very well, as it has little flavor of its own.
