Broccoli soup
Peel and chop 2 onions, chop 1 large bulb of fennel, peel 3 cloves of garlic, chop 1 kg of broccoli, peel the stalks.
Fry the onions and garlic in frying oil until translucent. Add the broccoli and fennel and pour in the water.
Add salt and grated nutmeg, simmer for 30 minutes. Puree with a hand blender.
The picture is not very nice – the soup looks more delicious in real life. It is beautifully green.
