Millet salad
Millet contains many minerals and trace elements, especially silicon, iron and magnesium. For 4 people as a side dish.

| 2 TABLESPOONS | Lemon juice |
| 1 small | red onion |
| 100 g | Dates |
| 2 TABLESPOONS | Olive oil |
| 100 g | Almonds |
| 150 g | Spinach or lamb’s lettuce |
| 1/2 TSP | Chili flakes |
| 100 g | cooked millet |
Peel and finely chop the onion. Deseed and chop the dates. Mix the lemon juice, onion & dates in a bowl and leave to infuse for 20 minutes. Cook millet. Heat the olive oil in a pan and roast the almonds in it. Clean the spinach/field salad and spin dry. Mix everything together and season with salt, chili flakes, the remaining olive oil and lemon juice. Enjoy fresh.
