Avocado spread

Refreshing and filling at the same time. Quick and easy to make. With enough lemon juice, the spread will keep for 2-3 days in the fridge.

Quantity Ingredients
4 pieces ripe avocados
1 large Meat tomato
1 piece Juice and zest of one lemon
1 pinch Salt

Squeeze the lemon and peel a little of the zest, place together in a bowl.

Scoop the flesh out of the avocados and mash together with the lemon.

Dice the beef tomato and fold into the avocado mixture.

Delicious as a dip, for dipping vegetables. As a spread for waffles or with corn chips.
