Vegetable pan with white beans
The ingredients for the vegetable pan with white beans are: 1 large onion, 1 pepperoni, 1 eggplant, 3 peppers, 300 gr chard, some white cabbage and 1 jar of white beans.
Dice the onions, cut the peppers into pieces and fry both in coconut oil with a pinch of salt.
When the onions are translucent, add the diced eggplant and a good splash of water so that nothing burns.
When the eggplant is almost mushy, add the pieces of bell pepper, stir, adding a sip of water if necessary, just so that nothing burns. It should not float in water.
Cut the stalks of the chard into pieces, add and stir again and again.
Add the white cabbage and the chard leaves, and a sip of water.
Cook briefly over a high heat until all the water has evaporated and then remove from the heat.
Add the white beans and stir in.
