Make your own mango salsa
Mango salsa is fiery and fruity. Mangoes are on offer at the moment, so I came up with the idea of making a salsa to go with the asparagus: Peel a mango and cut into small cubes. Squeeze 1/2 lemon.
Cut 1/2 pepper into small pieces.
Finely dice 2 tomatoes
Finely chop 1/2 bunch of coriander, finely dice 1/2 onion, add the lemon juice and mix everything together. Chill briefly and serve in bowls with the dish.
Here with asparagus and potatoes.
